GD’s Charlotte Dagueneau has long had a friendship with one Fabien Espana who runs the best establishment in Chablis to drink the best of the best from the appellation.

We had a shortlist of Chablis producers in mind and whom we wished to contact, and in 2023, when Charlotte asked Fabien if there was one domaine we should approach, who would that be, without hesitation he said Didier and Pascal of Domaine Gilbert Picq.

Located in the tiny village of Chichée, southeast of Chablis
Domaine is run by Gilbert Picq’s children – Didier, Pascal and Marilyn
Low yields, meticulous work both in the vineyards and cellar
Wines are naturally fermented with indigenous yeasts, with élevage in stainless steel tanks
Zero oak is used
Four village-level wines are made and two premiers crus

Domaine Gilbert Picq is a special example of how exceptional wine can be made from ‘’lesser’’ vineyards, when expertise and attention to detail are applied in both vineyard and cellar. The village wines are treated with just as much reverence as the premier cru holdings. Didier feels the wines from the village cru vineyards in many ways serve as the flagship wines for the domaine.
