Tasting Notes

"The 2025 Cartology is a blend of 93% Chenin Blanc and 7% Sémillon, with a little more fruit from Bottelary than usual, raised in cement eggs, foudres and old barrels for 11 months. This has an exquisite nose with wonderful delineation, that slate-like scent permeating the citrus, lemon and white peach scents, blossoming in the glass. The palate is medium-bodied with a fine thread of acidity, a little pithy pear and blackcurrant leaf that leads to a tangy and long finish.
