Tasting Notes

"Savagnin is an extraordinary grape that has the same DNA as the Traminer grape. Due to its multifaceted personality, there are many ways to vinify Savagnin. In the Jura, Savagnin is mainly used for oxidative wines (under sail): Yellow Wine (which requires at least 6 years in barrels, under sail), or simply Savagnin (between 2 and 5 years in barrels, under sail). The Savagnin Ouillé, sometimes called Traminer or Savagnin Flower, is the non-oxidative version, produced by the Domaine du Pelican since 2012. For the first time in 2018, vinified some of our Savagnin bunches as if they were red grapes, fermenting them with their skin, to create the cuvée “Macération Pellicular”. This gives the wine an additional structure without losing its tension and vibration. Exotic and spicy cooking is an interesting marriage for this cuvée." - Winemaker's notes
